Overleaf projects should be backed up regularly outside of Overleaf. There are two recommended methods. Note: to use Overleaf premium features, login with SSO → https://www.overleaf.com/edu/ethz. We have 3 different ways/tools to restore deleted data on the server. The first one (very fast) is only usable if the deletion occurred in the last 7 days; the other tools work even for older data.
